Brandy Mushroom Crepes

Okay, let me start by saying that I never need bacon again. I know! Crazy! But, turns out mushrooms crisped up in olive oil and a little salt tastes crazily similar to bacon. And I never would’ve believed it except it just happened to me! (What is happeninggggg?!)

So, now that we have that out of the way, you should really make these crepes. And if you haven’t ever made crepes before, fear not; it’s actually kind of fun. You basically make a thin pancake batter and swish it around the bottom of a buttered pan until it coats it, then flip and voila! You look like a super fancy human being for, basically, making lightweight pancakes. Totally doable. I’d definitely recommend making them with the whole wheat flour if you have some on hand; they seem a bit more substantial to stand up to the mushroom sauce.
